I am a fan of beets, but they can overpower other vegetables pretty fast. I had a salad in a restaurant that had roasted beets in it and I loved it. I grew a few beets in my garden this year so I tried roasting them in the oven.
1 TB Brown Sugar
1 TB Butter
1/2 cup peeled and cubed beets
Roast at 350 for 30-40 minutes until they are starting to crisp and the brown sugar and butter are caramelized and getting hard.
My toddler daughters ate them them plain and asked for seconds. I added ours to a salad of spinach with pecans, apples and light raspberry vinaigrette.
